Vegan ‘tuna’ sandwich with Future Farm

Hand assembling a fresh sandwich with lettuce, tomato, onion, and tuna on a wooden board by a window.

It may seem unlikely at first, but this sandwich shows just how far plant-based cooking has come. So-called plant-based ‘tuna’ offers the texture, flavour and versatility of the traditional version, while presenting an entirely different proposition. Made with Future Farm, it creates a creamy, well-balanced filling that is ideal for everyday meals. It is perfect for anyone looking to cut down on animal-derived ingredients without sacrificing convenience or enjoyment.

Vegan ‘tuna’ sandwich

Ingredients

  • 1 pack of Future Tuna
  • 2 tablespoons of vegan mayonnaise
  • 1/2 finely grated carrot
  • 2 tablespoons of sweetcorn
  • 1 tablespoon of finely chopped red onion
  • Juice of 1/2 lemon
  • Salt and black pepper, to taste
  • Chopped parsley or spring onion, to taste
  • Slices of bread of your choice

Method

  1. Place the Future Tuna in a bowl and use a fork to break it up thoroughly, creating a more shredded texture.
  2. Add the grated carrot, sweetcorn and red onion, then stir until everything is evenly combined.
  3. Mix in the vegan mayonnaise and lemon juice until the filling becomes smooth, even and lightly moist.
  4. Season with salt and pepper, then finish with parsley or spring onion for freshness.
  5. Assemble the sandwich by spreading the filling between slices of bread. For an extra touch, add green leaves or tomato slices.
  6. Serve immediately, or chill for a few minutes to make it even tastier and firmer.
