Johnnie Walker Black Cask launch and maturation
Johnnie Walker is adding a new blend to its permanent range for the first time since 2011. Johnnie Walker Black Cask, which will launch in the United States on 1 March, is matured exclusively in former bourbon barrels. The approach creates a sweeter profile, bringing vanilla and caramel flavours to the fore, and is intended to bridge the gap between Scotch and American whiskey.
Dr. Emma Walker, Johnnie Walker’s master blender, developed Black Cask using single malt and single grain whiskies also found in Johnnie Walker Black Label. These include whiskies from the Cameronbridge, Glen Elgin and Roseisle distilleries. While Black Label contains some whiskies matured in seasoned European oak, Black Cask is entirely focused on ex-bourbon-barrel maturation.
“We approached Johnnie Walker Black Cask with a wealth of knowledge and inspiration from Black Label,” Dr. Walker tells Food & Wine. “We started with some of the most expressive whiskies from the heart of Black Label, choosing these casks for how they manage to unlock new depth, richness, and warmth. The maturation approach emphasises the sweet and smooth character of Black Cask, enhancing those vanilla flavors in Black Label with added notes of caramel, toffee, and toasted marshmallows.”
Johnnie Walker Black Cask flavour profile
According to Dr. Walker, maturing every component in ex-bourbon casks draws out distinctive new flavours. “Take Cameronbridge, for example. It’s a distillery known for its notes of fresh apple, and sweet and creamy texture. When it’s matured in these specific casks, it becomes this soft and smooth expression which brings something wonderfully unique to the blend.”
Like many Johnnie Walker blends, Black Cask contains a proportion of peated whisky. Dr. Walker says peat is used as an accent rather than the dominant flavour. “The presence of peat in Johnnie Walker Black Cask allows for notes of delicate smoke to weave through, which emphasises the depths and complexity of the whisky,” she says. “We think of it as a seasoning of sorts; its contrast reveals more of that soft sweetness while allowing those fresh fruit notes to shine through.”

The brand’s additional tasting notes for Johnnie Walker Black Cask describe “layered notes of creamy vanilla sweetness, rich caramel depth, gentle spice, and smooth oak warmth.” The finished blend is bottled at 43% ABV, a strength Dr. Walker chose so that fresh-fruit and toasted-marshmallow flavours could sit “in harmony.” In the US, each 750 ml bottle has a suggested retail price of $35. Unlike Johnnie Walker Black Label, which carries a 12-year age statement, Black Cask is sold without an age statement.
Black Cask joins six other permanent Johnnie Walker expressions: Red Label, Black Label, Double Black, Green Label, Gold Label Reserve and Blue Label. Johnnie Walker 18 Years is also sometimes counted in the range, although less frequently. Black Cask is the first permanent addition since 2011, when 18 Years and Double Black reached global markets. Owned by Diageo, Johnnie Walker is the world’s top-selling Scotch whisky by volume.
