I’m not a fan of cooking eggs. Apologies (but not really): cracking shells, making a mess and washing my hands afterwards is hardly a ritual I enjoy. Still, because I love eating eggs in nearly every form-scrambled, poached or fried-I manage largely because of my exceptionally convenient, sleek egg pan.

When I’m making something I consider a hassle, eggs included, I do not reach for my 25 cm Lodge cast-iron pan or wait for my Viking stainless-steel skillet to come up to temperature. Instead, nine times out of ten, I use my Made In Cookware 8-Inch Ceramic Nonstick Frying Pan. Here is why.

Beneath its hard-wearing ceramic nonstick finish, this frying pan has the same fundamental construction as the Made In pan that excelled in our stainless-steel skillet testing. Its body has five layers: stainless-steel cladding, an aluminium core and surrounding layers of aluminium alloy. In testing, our editors found the construction impressively responsive and even-heating, and my long-term testing at home has produced the same result. The glass hob in my flat sits ever so slightly unevenly on the floor, which regularly leads to inconsistent cooking in my other pans. Yet, despite the shortcomings of my hob, this Made In pan has never shown a hot spot. I preheat it over a medium heat while gathering my breakfast ingredients, and its entire cooking surface is ready to go the moment I add the eggs.

Its heating ability is not the sole reason I recommend it; it is the usability that makes this nonstick egg pan my top choice. Retrieving it from the cupboard where I store my cookware requires virtually no effort, as it measures just 8 inches across and weighs under 0.9 kg. The handle is exceptionally light and, as Made In promises, remains cool. Indeed, unlike with the other nonstick pans I have tested, I have never needed a tea towel or oven gloves. Nearly as long as the pan itself, the offset handle is a thoughtful safety feature that also leaves plenty of room for my hands to keep the pan balanced.

The nonstick surface is every bit as impressive as the pan’s remaining features. Made In fully discloses the substances used in its manufacture, and it is reassuring that the CeramiClad range contains no PFAS, PFOA, PTFE or other toxic chemicals. I have made eggs, pancakes, tomatoes, steak bites and other dishes on the non-toxic nonstick coating, both with and without oil, and almost nothing has adhered to it. Oil may build up over time, but boiling a mixture of vinegar and bicarbonate of soda in the pan deals with that stubborn residue. I might say I wish it were dishwasher-safe, but it creates too little mess to justify using the dishwasher. Once cool, it takes me fewer than 30 seconds to wash by hand before leaving it to dry on the draining rack.

Were I able to alter one thing, I would change the rounded, raised rivets, which can trap food and make washing up take fractionally longer. Other than that, its only drawback is being too small when I fancy spring-onion pancakes for breakfast or a large tomato-and-egg stir-fry for dinner. For those occasions, I turn to the equally impressive 25 cm pan instead.

If you are after a compact, non-toxic nonstick pan that makes cooking eggs regularly tolerable-and occasionally even enjoyable-choose the Made In 8-Inch Ceramic Nonstick Frying Pan. Its cool-touch handle and induction-ready base have never failed me, and I am confident you will like it as much as I do.
