Preparation time: 10 mins
Cooking time: 15 mins
Total time: 25 mins
Serves: 4
Ingredients
15 ml butter
15 ml olive oil
4 russet potatoes, peeled and finely sliced
15 ml fresh thyme, chopped
15 ml fresh flat-leaf parsley, chopped
5 ml fresh rosemary, chopped
5 ml fresh oregano, chopped
1.25 ml paprika
Salt and pepper, to taste
22.5 ml garlic, minced
0.6 ml cayenne pepper (optional)
Directions
Warm the butter and olive oil in a large skillet over a medium heat. Lay the potato slices across the base of the skillet in one layer. Leave them undisturbed for 5 minutes, until the undersides are starting to brown.
Scatter over the thyme, parsley, rosemary, oregano and paprika. Flip the potatoes and cook for a further 5 minutes, or until soft. Remove from the heat, then add the garlic and cayenne pepper. Toss gently for around 1 minute, until the garlic has softened.
