These easy sautéed leeks have a delicate flavour and make an excellent accompaniment to grilled steak or salmon. For the best caramelisation, leave them undisturbed as they cook.
Preparation time: 5 mins Cooking time: 16 mins Standing time: 5 mins Total time: 26 mins Serves: 4
Ingredients
2 large leeks
2 tablespoons unsalted butter
Salt and freshly ground black pepper, to taste
Directions
Trim away and discard the root ends and dark green tops of the leeks. Slice the leeks into 1/2-inch rounds. Put them in a bowl of cold water and leave for 5 minutes. The leek pieces will rise to the surface, while any grit falls to the bottom. Lift the leek slices out with a slotted spoon, place them in a colander and shake away the excess water.
Melt the butter in a large frying pan over a medium heat. Add the leek slices, then cook without moving them for 8 minutes.
Turn the slices over, season with salt and pepper, and cook for a further 8 minutes.
