This cheesy polenta makes a flexible accompaniment for pork, chicken, beef or fish. To keep it smooth and free from lumps, add the cornmeal gradually while whisking continuously.

Preparation time: 10 minutes
Cooking time: 25 minutes
Total time: 35 minutes
Serves: 8

Ingredients

  • 480 ml whole milk
  • 480 ml water
  • 1½ teaspoons kosher salt
  • 240 ml polenta or yellow cornmeal
  • 4 tablespoons unsalted butter
  • ½ teaspoon freshly ground black pepper
  • 113 g mature Cheddar cheese, grated

Method

  1. Place the milk, water and kosher salt in a large saucepan over a medium-high heat and bring to the boil. Slowly whisk the polenta into the boiling milk and water. Turn the heat down to low, then cover the pan. Cook for around 20 minutes, until creamy, removing the lid to stir every 3 to 4 minutes so the polenta does not stick.
  2. Take the saucepan off the heat and mix in the butter and pepper until fully combined. Stir in the cheese a little at a time until melted, then serve hot.
