Ingredients

  • Cooking spray
  • 12 bacon rashers
  • 10 large eggs
  • 60 ml milk
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 60 ml sliced spring onions
  • 60 ml diced jalapeño peppers
  • 60 ml diced roasted red peppers
  • 120 ml grated Cheddar cheese

Bacon egg cups method

  1. Set the oven to 190°C. Coat a 12-hole muffin tin with cooking spray.
  2. Place the bacon on a microwave-safe plate and microwave on high for 75 seconds.
  3. Use one rasher of bacon to line each muffin hole, running it around the sides.
  4. In a bowl, whisk together the eggs, milk, salt and pepper, then spoon the mixture into the muffin holes. Add 1 tablespoon of spring onions to four cups, 1 tablespoon of jalapeño peppers to another four cups, and 1 tablespoon of roasted red pepper to the final four cups.
  5. Bake until the tops are only slightly moist, around 20 minutes. Scatter the Cheddar over the muffins, then bake for about 5 minutes longer, until the eggs are fully cooked and the cheese has melted.
